PEMBROKE, Mass. (WBZ NewsRadio) — A Weymouth-based company specializing in seafood broth seasoning has found a new use for the invasive European Green Crabs that inhabit the shores of Massachusetts.
St. Ours Clam Broth believes the best way to fight against these crustaceans, is by eating them. Sharon St. Ours runs the business and has created a new dehydrated broth from the abundant population.
“You add it as a stock, or you can use it as a seasoning,” St. Ours said from her Pembroke processing plant. “These are in-shore crabs, they’re not ocean crabs, so they’re a little less salty.”
The crabs are small in size and don’t offer much meat, but in areas like Europe, the shellfish are considered a delicacy. The company believes broths and seasonings could be a better choice for both consumers and the environment here in Massachusetts.
The stock was even good enough to impress the panel of judges at the recent Seafood Expo North America at the Boston Convention Center, where St. Ours placed as a finalist.
“We were one of the three finalists for about 70 entries,” St. Ours said. “It’s a really good flavor, seafood flavor.”
