Canotto-Style Pizza Coming To Cambridge

CAMBRIDGE (WBZNewsRadio) - While there's no lack of pizza choices in the Greater Boston area, a new pizza-spot in Cambridge is offering a rare version on the menu: canotto-style pizza. Michael Lombardi is the Chef and owner of Si Cara, and calls the pizza a bread lovers dream.

"If you've ever had bread that is freshly baked and has that light crumb and you just spread some toppings on it and eat it with a little bit of olive oil. It's like that experience through out the whole pizza." He told WBZ's Matt Shearer.

In order to be considered true Neapolitan pizza, the pie must be made in a very specific process with a strict ingredient list. Offshoot styles like the canotto are becoming increasingly popular around the world.

Pizza won't be the only specialty item on the menu at Si Cara, the restaurant has a full liquor license with a focus on its wine selection from Italy and beyond.

The restaurant in Central Square is set to open in July, and includes seating for 55 guests indoors and a patio that has an additional 30 seats.
