Blue Hills Regional Culinary Program Reopens Restaurant

CANTON, Mass. (WBZ NewsRadio) — Chateau de Bleu, a restaurant at Blue Hills Regional Technical High School, has reopened for business following months of renovations.

The luncheonette is run by the teachers and students of the school's culinary arts program. Students gain firsthand, comprehensive experience on all facets of the culinary world.

"They're gonna learn baking, they're gonna learn prep, catering, how to work on the hot line, how to wait on customers, how to be the cashiers," said Rich Spada, the program's lead teacher. "Every aspect of the industry from management to basic prep."

Spada learned to cook at Blue Hills Regional and is now passing his knowledge onto his students.

"There's real customers waiting for them, it's good real world experience," said Spada. "Nothing that we do is theoretical. Everything that we make has a purpose.

Chateau de Bleu is open to the public Tuesday-Friday from 11:00 a.m. to 1:15 p.m. Teachers set the menu, while students are allowed to input their own specials.
