BOSTON (WBZ NewsRadio) — A man who made a lot of 'clams' as the Chief Executive Officer of Legal Seafoods is taking his next step in the industry with a meal delivery company that flash-freezes fish and packages lobster for ready-to-heat consumption.
Legal Seafoods was a Boston dining institution before Roger Berkowitz sold the restaurant chain just as the pandemic caused the dine-out businesses to suffer a huge blow. Now, he's debuting a meal delivery service, Roger's Fishing Company that's based in Salem, New Hampshire that uses nitrogen in a more effective way to freeze fish. Berkowitz laid out the process to WBZ's Mike Macklin.
"This isn't the old fashioned frozen fish, this is the exact opposite— it catches it, takes it when it's very fresh, at its peak, and then puts it under nitrogen. So then this way, people can have fresh fish when they want. Frozen makes it much more convenient, also, it can maintain and bring it to a new level of quality. Because I will take this product against any product that's being landed fresh, and I'll guarantee this comes out better," Berkowitz said.

Berkowitz goes on to claim that eating out costs are up 30 to 40 percent, saying that recent evidence suggests more consumers are eating at home.
"They still want good product. People started connected the dots, and saying that 'no matter what, it's actually more value to eat at home.' And so what I'm doing now is saying how can I serve a quality product that's as good as, or better than, and convenient for people at home. That's the basis of this new business," Berkowitz said.
