New Cambridge Bagel Shop Focuses On Quality Through Simplicity

CAMBRIDGE, Mass. (WBZ NewsRadio) — After winning a Best Bagel Shop award in Rhode Island, 'Rebelle' has set its sights on Massachusetts opening a new store in Cambridge on Third Street.

It's only been open for two weeks in its new location, but the store is already attracting a large fan base.

Store owner Milena Pagan, who relocated to Mass. from Puerto Rico, said it feels great to return to the Bay State. "I was just really hungry to come back home," she said. "I'm happy to be back close to MIT, my old stomping grounds."

Asked what makes her bagels recognized as one of the best around, she said they make the dough the day before and let it sit for 24 hours giving the bagels time to develop more flavor and consistency.

She said simplicity is key.

Their dough is made from five simple ingredients: flour, brown sugar, salt, yeast, and water with no dough conditioners or preservatives.

She also said that while her shop received top accolades in Rhode Island, she's not trying for the same recognition in Massachusetts. She said what's most important is to be the best bagel shop for her customers.
