Pop-Up Restaurant In Cambridge Ditches Tips, Bosses

CAMBRIDGE, Mass. (WBZ NewsRadio) — You won't need to tip if you eat at this restaurant in Cambridge.

McGuirk’s Folly is a pop-up seafood restaurant at the Middlesex Lounge that's experimenting with a new business model, that sees every employee—from waiters to dishwashers—paid evenly. The restaurant has no owners or managers, and all employees are a partner.

"I think we're some of the best-compensated restaurant workers in the city," Pierce Kelley of McGuirk's Folly said.

Since all employees are paid equally and tips and tax are factored into the bill, customers at McGuirk's Folly do not need to leave a tip for their server.

"We're never going to say no to someone giving us extra money, who would," Kelley said. "But at the same time that's not a 'wink-wink' please tip us. Please don't."

As of right now, the pop-up is set to run until the end of the month but after a great start to the experiment, Kelley said they may look for a permanent home for McGuirk's Folly.

"This month is a success already," Kelley said.

Right now you can only eat at the restaurant with a ticket purchase. Tickets are available through OpenTable.
